Pistachios will typically be harvested at the end of summer or at the beginning of fall when the outer hull will crack open. Such division shows that the nut within has grown up. Mechanical tree shakers are employed in commercial orchards to hit the nuts on the collection equipment. The outer hull is also stripped off immediately after harvesting to avoid staining and rotting. The nuts are then dried to eliminate moisture content and then are roasted, salted or even packed.
